Peel, wash and cut irish potatoes into cubes. Add into a pot of water and sprinkle some salt. Allow to cook till soft. Drain and keep aside.

Peel the boiled eggs, add into a bowl and mash then add the cooked potatoes, cucumber, tomatoes, seasoning and mayonnaise.

Mix altogether and serve. It can be served with rice and stew or jollof rice.
