In a large bowl, combine the oil, sugar, and wine, and mix for a few minutes with a whisk until the sugar slightly dissolves.
Add the spices, baking powder, baking soda dissolved in the juice, and zest. Mix briefly. - 2
Gradually add the flour while mixing, and when it's all incorporated, knead briefly. Do not overwork the dough; we want it to be pliable but soft, otherwise, the cookies will turn out hard. The flour may not be fully used, depending on the cup size you use.

Shape the cookies and, if desired, dip one side in sugar.

Line a baking sheet with parchment paper and arrange the cookies.
Bake in a preheated oven at 340°F (170°C) with fan for 25 minutes. - 5

With the same dough, you can make cookies. The design is easy. After cutting circles with a cookie cutter or glass, dip them in sugar and arrange them on the baking sheet. Create a design using the back of a lemon squeezer and a tool that cuts vegetables wavy. Bake 2 minutes less.
