Sicilian Steamed Cauliflower

My friend from Sicily taught me this recipe. This is her mamma's recipe.

Separate the cauliflower into florets and rinse, then put into a saucepan.

Add the olive oil, wine, salt and pepper. Cover the saucepan and simmer.

After 5 minutes, stir quickly and cover again, cooking for another 5 to 10 minutes. When the excess water has evaporated, it is done. Transfer to a serving dish, sprinkle grated cheese and serve while piping hot.
