Wash and grate the carrots

Heat a big kadai or thick bottom wok.

When the kadai gets hot, add the bowl of pure ghee to the kadai let the ghee too get hot then add a tsp of green cardamom powder to it.

Next add grated carrots to the ghee and cardamom mixture and stir and mix it all up thoroughly bottom to top, cover it up for 8 to 10 minutes Keep the gas on low flame. Keep checking by opening the cover and mixing.

When you cover the grated carrot, it starts cooking in its own juices and starts reducing slowly.

Then open cover after 8 to 10 minutes you will see steam rising and the carrots cooking and leaving a fragrance.

To this then add the khoya, mix it for the next 5 minutes.

Then add the sugar and cook all this without cover for the next 40 minutes checking and mixing. Carrots will gradually loose their rawness.and start leaving ghee on the sides. When this the halwa is done.

Add the dry fruits to the carrot halwa and serve.
