Firstly heat oil in a pan and deep fry potatoes and baingan until they become soft. Keep it aside.

Now make a smooth paste with tomatoes, ginger, garlic, green chillies, fenugreek, and peanuts.

Now in the same pan heat 2 tbsp oil and put this paste into it.

Cook for 5 minutes then add aloo baingan, salt, and some water, as according your want the consistency of gravy, and cook for 7 to 10 minutes.

Add garam masala and turn off the flame.

Aloo baingan masala is ready. Garnish with fresh coriander.
