Coat a gratin dish with olive oil, crack the eggs and mix with salt and pepper.

Peel and halve or quarter the potatoes lengthwise and cut into thin slices.
An onion also cut lengthwise into thin slices.
Cut the sausages into thin round slices. - 3
Fry in olive oil, covered with salt and pepper to prevent burning.
Sweat and fry the onions and potatoes so that they do not burn.
When the potatoes and onions are soft, add the sausages. - 4
Mix hot in a gratin dish with eggs, sprinkle with chopped parsley and grated cheese and bake in the oven at 220°C for 20 minutes.
