  1. 3 1/2 ozchicken breast
  2. 2 teaspoonsBiryani spice mix
  3. 2 bowlslong-grain rice (day-old)
  4. 1 teaspoonturmeric powder
  5. 1 teaspoonchili powder
  6. 1 teaspoonhot sauce
  7. 1/2black tomato (sliced)
  8. 1 teaspoonmint leaves (chopped)
  9. 1 teaspooncilantro
  10. 1little oil
  11. salt to taste
  12. Biryani spice mix
  13. 1/4 teaspoonstar anise
  14. 1/4 teaspooncloves
  15. 1/4 teaspoonbay leaf
  16. 1/4 teaspoonblack pepper
  17. 1/4 teaspooncinnamon
  18. 1/4 teaspooncoriander seeds
  19. 1/4 teaspooncumin
  20. 1/4 teaspoondried chili
  21. 1/4 teaspoonturmeric

Cooking Instructions

    Make the Biryani spice mix: Crush equal weights of star anise, cloves, bay leaf, black pepper, cinnamon, coriander seeds, cumin, dried chili, and turmeric using a mortar and pestle, or use a grinder if you don't have a mortar and pestle.

    Heat a pan and add oil, then stir-fry the chicken, turmeric powder, and chili powder.

    Add the sliced tomato, cilantro, and mint, then add 2 teaspoons of Biryani spice mix and cook until the tomato becomes mushy.

    During cooking, add a little water to prevent burning. Spread the rice evenly over the sauce base and add hot sauce.

    Cover with a lid and simmer on low heat for 5 minutes. Uncover and gently stir before serving.
