Add peas and carrots in a microwave safe bowl and microwave for 5 minutes
Dry roast cashews in a microwave safe plate, microwave for 2 minutes - 5
Temper mustard seeds in hot oil in a pan over medium heat. Let mustard splutter. Then add cumin, urud, turmeric, asafetida powder, green chili, curry leaves; stir and add peanuts. Stir in the cooked peas and carrots, cover and cook for another 5 minutes, stirring occasionally to avoid sticking. After the butter is left over, add the butter and stir. Add chopped coriander cilantro. Turn off the stove.
