Eggplant Parm - Sub

When making eggplant parmigiana for dinner, I make a mental note to make a little more for delicious sandwiches the next day. Or if I'm in the mood for this warm Italian sub outright, I get right to it with the prep. Add cooked Italian sausage or roasted red peppers if so desired! My recipe for baked eggplant parm is within the ingredients section below.

Ingredients

2 servings
  1. 2Italian 6-8" (or 12”) long rolls
  2. Eggplant Parmigiana, personal recipe here.
  3. 1.5 cupsItalian pasta sauce
  4. 4-5 slicesprovolone cheese, cut in half

Cooking Instructions

    Cut the rolls lengthwise and add a little sauce on both sides of the roll. Arrange an even layer of baked eggplant (cut in half) on the bottom slice of bread and add a layer of provolone cheese on top.

    Bake in an oven (open-faced style) until the cheese begins to melt. Serve with favorite pasta sauce for dipping if desired.
