Oyster Omelet (Taiwanese Night Market Style)

My flour-to-water ratio gives a chewier texture. If you cook it a bit longer, the edges get crispy, but since oysters and bok choy release moisture, the crispiness softens quickly.
I remember it used to cost $35 per serving, now it's about $60. I haven't had it from a vendor in a long time... It's too expensive and not filling enough, so let's make it at home!
Add as many oysters as you like, or swap in shrimp or clams—whatever you prefer.

First, make the sauce: Mash the garlic into a paste.

Add hoisin sauce, spicy peanut sauce, mushroom oyster sauce, sugar, and umami seasoning. Mix well. Then add water and stir until smooth. Set aside.

Rinse the fresh oysters and set aside.

Wash the baby bok choy and cut into bite-sized pieces.

Combine sweet potato starch and cornstarch in a bowl. Add water and mix until smooth.

Heat a little oil in a nonstick skillet. Add a portion of oysters (about 8-10 pieces).

Pour the starch mixture over the oysters.

Crack one egg into the pan and break up the yolk.

Add some bok choy on top. Optionally, drizzle a little more starch mixture over the top.

Cook for 1-2 minutes, then flip. Cook for another 2 minutes, then transfer to a plate.
