I have made okonomiyaki countless times at home but it was always hard and didn't taste very good... So I researched and tried out various methods, and this is the most delicious way I came up with. It's now one of my family's go-to recipes.

Point 1: Let the ingredients rest.
Point 2: Make sure to whip air into the dough when mixing.
Point 3: Don't press down on the pancake when cooking. This will make it fluffy! Recipe by chi-bo-3

Ingredients

  1. 110 gramsFlour (cake flour)
  2. 200 mlWater
  3. 1 tspDashi stock granules
  4. 1 dashSalt
  5. 1 tbspJapanese yam (grated)
  6. 1Cabbage (shredded)
  7. 3 slicePork
  8. 3Eggs
  9. 1Green onions, red ginger (finely chopped)
  10. 1Tempura crumbs, Sakura shrimp
  11. 3 sliceThinly sliced pork belly
  12. 1Okonomiyaki sauce, mayonnaise, dried bonito flakes, aonori

Steps

  1. 1

    Mix all the ingredients from the flour to the Japanese yams as listed in the ingredients list (let the mixture sit in the fridge for over an hour).

    Mix together the green onions, red ginger, and tempura crumbs. Add the sakura shrimp just before frying.

  3. 3

    To make a single portion, ladle a portion of batter into a bowl, add two ladleful of cabbage and 1 egg, and mix with a spoon 10 times (whipping air into it).

  4. 4

    Heat an electric griddle, spread out the the batter 2 cm thick, and cook for 2 minutes. Lay the pork belly on top and flip over.

    Cook for 5 minutes, top with okonomiyaki sauce, mayonnaise, bonito flakes, and aonori. It tastes great with spicy mayonnaise!
