Steps

Chop the aromatics finely

Grate the zest of 2 unwaxed lemons and squeeze the juice into a container (or the dish later)

Chop everything except the chicken drumsticks finely. Keep in seperate piles to put in at different times. Chop each lobe of the chicken livers in two, and you'll have about the right size.

Slice the bacon into thin strips. This next step is about building flavour. Choose a large heavy bottomed pan and make hot on the stove. Add a tablespoon or so of sesame oil and fry the bacon until golden but not crispy. If you have salt water preserved bacon, empty out the liquids in the pan and add a little more sesame oil. Put to one side.

Gently fry the chicken thighs in the sesame and bacon oil until light golden. Put aside.

Sweat the onions until translucent but not brown. If using chicken livers, add now. Add the butter, the bacon and chicken and lower the heat somewhat.

Chop the mushrooms into big chunks and add.

Add the aromatics except the Thai basil and the coriander and sweat for a little while.
Add the rice wine, the two soy sauces and half the lemon juice. Also add the coconut milk - 9
Top up with hot water and simmer on a low heat for around 45 minutes.

Add half the freshly chopped green herbs reserving half for garnish.
Don't let the pot dry out. Keep adding water if necessary. Remember, you need fluid and space for the noodles.
Add the pad thai noodles. Simmer for a few more minutes until the noodles are cooked and add the remaining lemon juice.Garnish with the herbs and diagonally chopped spring onions.
Serve as a dish, among others. I'm frying yesterday's rice in sesame oil and fresh ginger as a side dish.
