TIP:
If the fish isn’t pre-packaged, check the gills—they should be red if fresh. Also, look at the eyes; they should be clear and bright, not white or sunken, which means they’re not fresh. - 2
Even if the store cleans the fish, always check that it’s properly scaled, the gills are removed (many times they’re not), and inspect the inside of the belly. There’s a thin membrane—if you see the bones, it’s good, but if not, make a small cut to remove the membrane and wash thoroughly.
If you see black along the inside edge of the belly, scrape it off with a knife to avoid bitterness.

Make 3 diagonal cuts on each side of the fish and pat dry with a paper towel.
In a medium-deep tray, mix all the seasonings well, or just use lemon, salt, and pepper if you prefer.
This is just a suggestion—feel free to adjust the seasonings to your taste. - 4
Rub the seasoning mixture all over the fish, inside, outside, and into the cuts.
I like to marinate it overnight, turning it in the morning so the flavor soaks in evenly. But you can also cook it right away if you prefer.

Preheat your air fryer to 400°F (about 200°C) using the Fryer setting (not Roast).
If you don’t have an air fryer, you can fry the fish in oil instead.Remove the fish from the marinade and let any excess liquid drain off. Spray the air fryer rack with oil before placing the fish on it, then spray the top of the fish as well. Set the timer for 22 minutes.
Halfway through, the air fryer will alert you to flip the fish. Open it, flip the fish, and spray with more oil.
If you want it crispier, add 2 more minutes, or cook for just 20 minutes for a lighter finish. - 6

TIP:
If frying in oil, make sure the oil is very hot and cook over medium-high heat. If it’s your first time, sprinkle a pinch of salt in the pan before adding the fish.Flip the fish only once; when the edges are golden and the cuts have opened more, it’s ready to turn. Use a large spatula to make it easier, and fry the other side for 5 to 8 minutes.
