Clean the chicken gizzards thoroughly. Wash them with cold water and lemon juice, then rinse and drain. Place them in a pot, cover with water, and cook for about 30 minutes, or until tender.

When the gizzards are warm, cut them into small cubes and set aside. In a pot, heat a little oil and sauté the onions (finely diced) and garlic for about 2 minutes. Add the yellow chili pepper paste and cook for another 3 to 5 minutes over medium heat. Stir in the soy sauce, black pepper, and cumin. Taste, then add the water and salt.

Add the gizzards, mix well, and cook for 10 minutes. Finish by adding the finely chopped cilantro. Taste and adjust salt if needed. Serve with potatoes, yuca, or rice.
