Paprika Gravy, Smothered Rabbit

Ingredients

  1. 1 dozenmedium-small red potatoes
  2. As neededwater just enough to cover potatoes
  3. 3 tablespoonssalt for boiling potatoes
  4. 3 poundsrabbit
  5. 2/3 cupground paprika divided
  6. 1 teaspoonground white pepper and equal black pepper
  7. 1 poundwhite button mushrooms
  8. 1-1/2 sticksbutter
  9. To taste salt on the rabbit
  10. 1/3 cupflour all purpose
  11. 2 cupssliced onion
  12. 8 ouncessour cream

Cooking Instructions

    Wash the rabbit and potatoes. Add salt to a pot along with the potatoes. Cover with water. Cut the rabbit up. Mix the equal amounts of ground peppers.

    Heat a big frying pan. Add the oil. Season the rabbit on one side, with peppers. Lay the rabbit into the pan seasoned side down. Then add peppers to the top

    Simmer 7 minutes. Add half the paprika to the tops of the rabbit. Simmer, 5 minutes while you slice the onion. Add the onions on top. Take the potatoes off heat when done.

    Turn the rabbit and add the rest of the paprika. Separate the caps and stems from the mushrooms. Stir in both stems and caps slice the stick of butter into pats and add to the rabbit in the pan. Add some

    Simmer for 10 minutes, remove the rabbit from the dish. Add the flour and stir in well. Gently crush each potato just enough to flatten and break the skins.

    Add a cup of the water you boiled the potatoes in and make a gravy stirring constantly. When thickened add the rabbit back into the pan. Allow to cook a bit. Add in the sour cream.

    Add in the potatoes and stir. Serve, I hope you enjoy!!!

Hi, rabbit is very lean, and it is flavourful. If you don't think this one is to try I have about, I think, 6 recipes for rabbit. Just season like you would any other meats and add a good healthy fat to it. Let me know if you give rabbit a try, and how you liked it or not.
