Ingredients

6 people
  • Fish
  • 2 poundsSwai Fish fillets
  • To taste salt
  • As neededpaprika
  • To taste ground black pepper
  • Batter
  • 1 cupself rising buttermilk cornbread mix
  • 1 cupall purpose flour
  • 1/3 cupground paprika
  • 1/2 teaspoonthyme
  • 1/2 teaspoontarragon
  • 1/2 teaspoonground white pepper
  • To taste salt
  • 3large eggs
  • As neededmilk
  • 1/2 teaspoongranulated onion powder
  • 1 tablespoonfry day french fries seasoning
  • Chips
  • 2 poundswhite russet potatoes
  • As neededwater just enough to cover and soak potatoes
  • 2 tablespoonssalt to soak potatoes
  • As neededoil to fry potatoes with
  • 1tablespoon, fry day, fry seasoning

Steps

  1. 1

    Mix the batter ingredients with it's spices rinse and dry the fish fillets. Cut the potatoes into french fries and cover with water. Add salt and stir. Let the potatoes soak at least 30 minutes just covered with salty water.

    Heat oil. When soaked, drain the potatoes and dry them on paper towels. Fry them.

    Fry till browned move them to paper towels to absorb excessive amounts of oil. Season the filets. Coat with the batter mixture.

    Fry the filets coated with batter in the hot oil turn as needed so not to burn when done move to paper towels to absorb excessive amounts of oil. Serve with the chips, I hope you enjoy!!!
