Preheat oven to 350F. Grease and flour. Line two 8 inch round cake pan with parchment paper.

In a medium bowl sift together flour, baking powder, baking soda and salt until well combined.

In another bowl cream together the butter and sugar until light and fluffy.

Add the 3 eggs, one at a time, beat until well combined after each addition.

Add the oil and vanilla extract, beat until incorporated.

Add 1/2 of the flour mixture to the wet mixture, beat until combined. Add the buttermilk and beat until combined.

Repeat this process.

Divide the batter between two 8-inch (20cm) round cake pans.

Bake at 350F (175C) for about 40 minutes, until toothpick inserted into the center comes out clean.

Allow the cakes to cool for 5-10 minutes in the pan. Release from the pan, let it cool completely

For the Frosting: In a large bowl, beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract. Beat until smooth and creamy. In a separate bowl beat heavy cream to stiff peaks. Then fold into the cream cheese mixture

Assembly: Place one cake layer with flat side down. Spread the layer of frosting, place the second layer of cake on top of the frosting, flat side up. Spread evenly the frosting on top and sides of the cake. Decorate the edge of the cake with sprinkles. Spread the ganache over the cake and add some of the leftover frosting on a piping bag and decorate the cake. You can also use any toppings or fruits of your choice.

Refrigerate for at least two hours before severing
