Heat oil in a large pot, then add in onion and cook for about 4 minutes then add in garlic, ginger, and all the spices mix well then add chopped tomatoes fry well.

When it becomes fragrant, add in potato & corral fry 2 -3 mins splash some water if it is sticking bottom of the pan.
Add all others vegetables plus paneer mix well and fry 1-2 mins then add broth cover and cook low flame till all veggies are soft.

Sprinkle some garam masala. Let is sit a few minutes with the lid on. Serve with rice or quinoa,naan,roti or pitta bread.

➡️ To cut down prep time: You can buy pre-chopped or frozen vegetables diced onion, prepared broccoli/cauliflower florets, etc.). Half boiled carrot.➡️ Adjust the consistency: For a thinner curry, add more broth/water.
