Long Xuyen Broken Rice (Cơm tấm Long Xuyên)

Rinse the broken rice thoroughly and cook it in a rice cooker as usual. Wash the eggs and place them in the rice cooker to hard-boil along with the rice.

Slice the pork leg and marinate with minced garlic, fish sauce, seasoning powder, oyster sauce, and a little sugar. Slice the pork fat and fry until golden, then remove the cracklings and set aside. Chop green onions and mix with the rendered pork fat to make scallion oil. In the same pan, briefly sear the marinated pork, then add the marinade, peeled hard-boiled eggs, and 1 cup coconut water or water. Simmer until the pork is caramelized and the sauce thickens. Adjust seasoning to taste.

Boil the pork skin, then slice into thin strips and toss with a pinch of salt, pepper, and roasted rice powder. Slice the braised pork and eggs thinly. Prepare the dipping fish sauce as desired.

Serve the broken rice with any pickled or fresh vegetables you have. I used pickled papaya and mustard greens. Plate the rice, add a bit of each topping, and serve with a bowl of garlic chili fish sauce.
