Vegetables ' nargis kofta curry' is a spiced boiled egg wrapped with potato and then added in the curry or serve as' fried koftas',originally the 'nargis koftas' are prepared by covering with boiled egg and minced meat , then shallow fry them, but this version is totally prepared with vegetables.   1. 6boiled eggs 🥚
  2. 4-5large potatoes 🥔 boiled & mashed
  3. 1 diced carrot 🥕
  4. 3-4 leavesred cabbage (shredded)
  5. 2finely chopped onions 🧅
  6. 1 tspkashmiri chillies powder 🌶️/ paprika powder
  7. 1 tsp coriander & cumin powder
  8. 2 tbspfinely chopped coriander leaves 🌿
  9. 5-6finely chopped green chillies
  10. 1 tbspfinely chopped ginger
  11. 1 tspgaram masala powder
  12. 3/4 tspblack pepper powder
  13. Salt to taste 🧂
  14. 1 tbspsunflower oil 🌻/ any vegetable oil
  15. Oil for shallow frying
  16. For curry:
  17. 3 tbspsunflower oil 🌻
  18. 3finely chopped onions 🧅
  19. 1/4 cupplain yogurt
  20. 1tomato puree (homemade) 🍅
  21. 1 tspkashmiri chillies powder 🌶️
  22. 1 tbspginger garlic paste 🧄
  23. 11/2 tbspgreen chillies paste
  24. 1 tspcoriander cumin powder
  25. 1/2 tspturmeric powder
  26. 1/2 tspgaram masala powder
  27. 1bay leaf 🍂
  28. Salt to taste 🧂
  29. 1 cupwarm water 💦

    Add salt 🧂and water 💦, boil it, add eggs🥚boil them well, till done, add boiled eggs in cold water, peel and keep aside.

    In a bowl 🥣, add boiled mashed potatoes 🥔, diced carrot 🥕, shredded red cabbage, finely chopped onions 🧅, finely chopped green chillies, finely chopped ginger, garam masala powder, black pepper powder, coriander cumin powder, finely chopped coriander leaves 🌿, kashmiri chillies powder 🌶️, salt 🧂and oil mix well and keep aside.

    Divide the potato mixture 🥔 into six equal parts, put some oil in your palm and take one portion of potato mixture 🥔, pat it to form as chapati, place a hard boiled egg in between and flatten potato mixture 🥔 and cover egg with it, do the same to all remaining eggs and keep aside.

    Heat oil, add one egg kofta and fry it, till golden brown, add on paper napkin, use the same method for remaining egg koftas🥚and keep aside.

    Heat oil, add bay leaf 🍂 fry for a sec, add finely chopped onions 🧅, cook till golden, add ginger garlic paste 🧄, cook for a min, add tomato puree🍅 cook till comes out from the sides, add kashmiri chillies powder 🌶️, coriander cumin powder, salt🧂, turmeric powder, green chillies paste, garam masala powder and mix well, cook again till oil comes out.

    Add whisk yogurt and mix well, cook for 2 mins and add warm water 💦 let it boil, after it starts bubbling, slowly add egg koftas one at a time in the gravy, let it boil for 10 mins and serve hot.

    Note: if you desired serve them as fried 'nargis koftas' or add them in curry.
