Ingredients

  1. Meat Mixture
  2. 2 poundsground lamb
  3. 2 poundsground sirloin
  4. Pinchcinnamon
  5. 2 teaspoonminced garlic
  6. 1 teaspoongranulated garlic powder
  7. 1 teaspoonmint
  8. 2 tablespoonstomato paste
  9. 1/3 cupflour
  10. 2 tablespoonsextra virgin olive oil
  11. 1 tablespoonground paprika
  12. To taste salt
  13. To taste ground black pepper
  14. 1/2 cupdiced shallots
  15. 1 teaspoonrosemary
  16. 2 teaspoonparsley
  17. 6 cupsbeef stock
  18. 24 ouncespeas and carrots
  19. 1 stickbutter I used Kerrygold Irish butter
  20. Mashed Potatoes
  21. 4 tablespoonssour cream
  22. 8 ouncesShredded sharp cheddar cheese
  23. 5 poundsYukon golden potatoes
  24. 1 teaspoonground nutmeg
  25. To taste salt
  26. As neededwater to boil potatoes
  27. 3 tablespoonbutter I used Kerrygold Irish butter
  28. 15 ouncesevaporated milk
  29. 3egg yolks

Cooking Instructions

  1. 1

    Add the meat ingredients together in a pot except the peas-carrots, and tomato paste.

    Cook till, meat is browned.

  3. 3

    Dice the shallots stir in.

  4. 4

    Add the butter and flour. Stir in the flour. Allow to cook 7 minutes.

    Add to tomato paste. Stir in the carrots and tomato paste. Pour in the beef stock allow to thicken. Remove from heat. Let rest.

    Peel and quarter the potatoes. Add water to the pot, just covering the potatoes. Then stir in the salt, and bring to boil. Cook till fork tender. Preheat oven to 400° Fahrenheit.

    Separate the yolks from the whites of the eggs. Add ground nutmeg and beat the eggs.

    Drain the potatoes. Then add sour cream, milk, butter, and egg yolk. Mix well mashing till smooth. I left lumps in mine still.

    Add the cheddar cheese and stir in well.

    In an oven proof dish coat with butter, then add the meat mixture evenly.

    Add the potatoes on top and spread them evenly. Take a fork and rake the top of the potatoes on top making grooves on top. Bake in the oven 45 minutes, let rest, 12 minutes. Serve I hope you enjoy!!!
