Tear the oyster mushrooms into small pieces by hand and place them on a baking sheet lined with parchment paper. Drizzle with olive oil, salt, sweet paprika, garlic powder, and oregano, and mix well. Bake in a preheated oven with fan at 340°F (170°C) for 20-25 minutes.

In a small bowl, prepare the sauce by mixing the vegan mayonnaise, chopped pickles, and pickle juice. Take 3 pita breads and in another small bowl, mix water, olive oil, and salt, then brush both sides of the pitas. Toast the pitas in a skillet for 1-2 minutes on each side.

Fry the potatoes in hot oil until golden brown. Chop the onion, tomato, and a little parsley. Take the parchment paper, place the pita on it, add the sauce, onion, tomato, mushrooms, and finally the French fries. Add ketchup, mustard, or anything else you like.

I used coleslaw since I didn't have tomatoes, and of course, I didn't add onion and parsley. They were still very tasty.
