Chocolate Flavored Soft Caramels

I wanted to try chocolate flavored raw caramel, so I made it myself.

If the caramel simmers for too long, it will harden, so give it a taste by putting a drop of it in ice water.
If it's too soft to cut, chill it in the freezer for a while, to make cutting easier.
If you chill it again once more before wrapping, it will be easier to wrap. For a big batch. Recipe by mie63

Ingredients

  • 200 mlHeavy cream (or vegetable-based cream)
  • 150 gramsSugar
  • 80 gramsButter
  • 50 gramsChocolate (chopped or chocolate chips)

Steps

    Combine sugar and butter in a sauce pan, and stir over medium heat until it turns brown.

    Add heavy cream (preheated in the microwave for 30 seconds) and chocolate to the saucepan, and simmer for about 10-15 minutes.

    Pour into a tray lined with parchment paper, then chill in the refrigerator until it hardens.

    Cut with a knife, and wrap individually in parchment paper. It should make about 70 caramels.

    To preserve, if they stick to the paper even when chilling in the refrigerator, transfer to the freezer.
