Steps
- 1
Preheat oven to 350°F
- 2
Line muffin pan with liners or spray with non-stick spray
- 3
Mash overripe bananas with tsp baking soda, set aside
- 4
Mix yellow cake mix as directed, adding one small box of instant pudding mix of your choice (vanilla, pumpkin spice, chocolate, etc.)
- 5
Stir in banana mixture and optional pecans or raisins
- 6
Pour into pan (muffin or bundt cake)
- 7
Bake muffins 16-20mins, bundt cake 30-35mins or until toothpick inserted comes out clean
- 8
Allow to cool and frost, if desired. These will be very moist, recommend only loosely covering. You may also put crumble on top before baking. If you cannot find pumpkin spice pudding but want these spicey, add 1-2tsp of pumpkin pie spice to your vanilla pudding mix as you add to cake mix.
