Add cumin seeds to the oil. Peel the potatoes and break them by hand into the oil. Chop and add the green chilies.

Add all the spices and salt, and sauté well. Let it cool. Add salt, carom seeds, and ghee to the flour.

Knead into a stiff dough with a little water. Make equal-sized balls. Roll out and cut in half.

Fill with potatoes and shape into samosas. Fry on low heat until golden. Spicy masala samosas are ready.
