I’ve become intolerant to some things over the years. It’s pushed me to be more creative and figure out ways to eat the things I love in a healthy way. I was craving a zuppa toscana, and this is what I came up with. The whole family loved it, and I hope you do too! 😄

Ingredients

  1. 1 containertofu (nasoya)
  2. 1/2 cupcoconut flour
  3. 3potatoes
  4. 1/2 bagturkey meatballs
  5. 2 handfulsSpinach
  6. 4 tbsChicken bouillon
  7. 1 tbsgarlic powder
  8. 1 tbsonion powder
  9. 1 tbspaprika
  10. 1 tbscayenne pepper
  11. 5 cupswater

Cooking Instructions

  1. 1

    Chop or slice the potatoes and boil them in a pot until cooked and drain.

  2. 2

    Blend the tofu, coconut flour and some water. Once blended, pour into pan with some oil

  3. 3

    Add the seasonings: chicken bouillon, garlic powder, onion powder, paprika, cayenne

  4. 4

    Cut meatballs into 4s each and chop up spinach. Then add to the pan.

  5. 5

    Add water and cook on medium for ten minutes
