Steps
- 1
Wash the zucchini and trim the ends. Cut them in half lengthwise and blanch in boiling salted water for 5 minutes. Score and scoop out the centers with a teaspoon.
- 2
Sauté the zucchini pulp with 1 tablespoon of olive oil and the halved garlic clove.
- 3
Chop the cooked ham.
- 4
Add the chopped ham, a couple of tablespoons of grated Parmesan, and the zucchini pulp (remove the garlic first). Mix well with a spoon.
- 5
Fill the zucchini halves with the mixture. Sprinkle with more grated Parmesan and a little breadcrumbs. Drizzle with a bit of olive oil.
- 6
Bake in a preheated oven at 350°F (180°C) for 25–30 minutes, until golden brown.
