Tomato Prawns with tofu egg stir-fry

A quick and simple dish, packed with protein and antioxidant rich tomatoes. I cut the tomatoes into large chunks for a good textural mouth feel :) This popular Chinese dish is usually made with ketchup. Pairing tomatoes with sweet shiro miso brings out the sweet and tangy tomatoes flavours without the use of ketchup.

Pan-fry prawns in a non-stick pan. 2 mins per side. Set aside. They don’t have to be cook through at this point.

Add minced garlic and fry tilll fragrant. Add in tomatoes and fry till liquid is released.

Mix silken tofu with egg and seasoning in a bowl. Mash till combined. Add this mixture into the pan. Cook for about 3-4 minutes. Then add in prawns and let simmer for another 3-4 minutes.
