Raw Papaya curry

Take boiled and squeezed soya chunks, chop raw papaya into small small cubes.

Marinade with salt + cumin powder + red chilli powder + coriander powder and mix well. Marinade for 30 -40 minutes.

Assemble ingredients for curry

In moderately heated pan / kadhai add oil and allow to heat, add cumin seeds + bay leaf + cardamom and allow to sizzle.
Add chopped raw papaya + slight salt + green chilli + ginger and sauté for 4-5 minutes under medium heat. - 5
Add chopped tomatoes and sauté for a minute or two. Then add all spices + 3 tbsp water and sauté till spices leaves oil.

Cover and cook for 2-3 minutes

Add marinaded soya nuggets and sauté for another 2-3 minutes. Add water + sugar + salt as required and cook till papaya is soft and cooked properly.

Lastly add ghee, mix nicely, simmer and cook further for 3-4 minutes. Keep in stand by mode and dish is done.

Serve with Phulka / Paratha / plain Rice.
