Rainy, cold weather can easily make you catch a cold :( and this is a dish that should be on the menu.

Wash the lean pork, finely chop it, and marinate with 1 teaspoon seasoning powder, 1 teaspoon fish sauce, a little chopped shallot, pepper, and a splash of cold water (to prevent sticking when stir-frying). Mix well.

Heat a little cooking oil in a pan, sauté some chopped shallot until fragrant, then add the pork and stir-fry until cooked.

Bring a pot of water to a boil, add 1 teaspoon salt. Cook the rice or cooked rice until it becomes a smooth congee, then add the cooked pork. Crack in an egg and poach it to your liking, either fully cooked or soft. Season to taste.

The congee is ready. Ladle into a bowl, top with green onions and pepper, and enjoy while hot.
