Most recipes call for pandan leave.
I dont have pandan leaves here.so i use paste
I made this using tm6 but you can also use regular pot for that

Cooking Instructions

Mix coconut cream with pandan paste
Set aside

Put sugar and egg in mixer bowl.
Use speed 2 for 2 minute and gradually increased it to speed 3.whisk for 5 minute

Decrease to speed 1 and add in the pandan coconut mixture and salt to the mixer
Whisk for 1 to 2 minutes at speed 1. Increase to speed 2 and whisk for 2 minute

Transfer to a pot and heat the stove.
Continue to stir for 30 minutes or until it thicken.

The kaya will not be as thick as store bpught there is no thickening agent in it.

You can add in a teaspoon of corn starch mix with warm water
Into your kaya while stirring it.I dont like to do that as i dont find it flavourful (gotta off keto to do this.hhehehe)

Let it cool and keep it in a container preferably air tight (i run out of one) and keep it in the fridge

Can last up to 3 weeks

I spread this kaya jam on them, then top with butter.
