This sweet is traditionally made of the cow's first milk after delivering a calf. It is also called a cheek milk. This milk is said to be very healthy and an immune booster. this milk is lower in fat and higher in protein than regular milk. Hence, the sweet is also super healthy.
Cheek milk is naturally yellow like custard milk, thick and a bit sticky.
It is super easy to make this sweet and it takes less than 15 min to make it!

Steps

Sieve the milk. Add sugar and cardamom powder.

Add a tsp on water in saffron and muddle a bit to bring out its flavour. Add it in the chicken milk. Combine everything very well till the sugar blends thoroughly.

Prepare a double boiler/Steaming pot. Pour the milk in a plate (at least 1½ cm level). Place it in the steamer. Cover the steamer and cook for 10-12 min on medium heat. You may see some air bubbles and some water on the surface upon opening the steamer. No worries, that's normal.

Do the knife test at 3 different places. It's ready if the knife comes out clean. Remove it from the steaming pot. DO NOT DISCARD THE WATER SEEN ON THE SURFACE OF THE KHARVAS. IT ACTUALLY MAKES THE KHARVAS TASTE JUICY.

Cut them into pieces. Refridgerate when it cools down. Finish it within a week.
The pic shows how the kharvas look smooth on the top surface and airy at the bottom.
