R2 Diet Tofu Skin Rolls

I recently started following the 4+2R diet. After a few days on R2, besides making one-pot meals, I sometimes want to try different flavors. Handmade tofu skin can be a bit irregular when you open it up, but it gets nice and fragrant when pan-fried. The filling is made with frozen firm tofu cubes, king oyster mushrooms, and garlic chives, seasoned with five-spice powder and additive-free black bean soy sauce. You can also make extra for tomorrow’s cold lunch box!

Ingredients

40 minutes
Serves 1 serving
  1. 5 sheetstofu skin (yuba)
  2. 1 blockfrozen firm tofu
  3. 2king oyster mushrooms
  4. 1 bunchgarlic chives
  5. Seasoning
  6. Five-spice powder, to taste
  7. Additive-free black bean soy sauce, to taste

Steps

40 minutes
  1. 1

    Cut the thawed, previously frozen firm tofu and king oyster mushrooms into small cubes. Dry sauté them, then season with five-spice powder and additive-free black bean soy sauce. Finally, add chopped garlic chive stems and leaves separately. Let cool. This filling can also be served as a cold dish.

    Lay out the handmade fresh tofu skin and pan-fry both sides until dry. Fill each sheet with the prepared filling.

    Roll up tightly and press to seal.
