Tomato and Salmon Red Marinated Salad

I made this recipe for my salmon-hating mother in law. I thought I'd mix it up with her favorite tomatoes, and try to camouflage it in all that red color. It was a big success! It's easy, but delicious!

Steps

Slice the onion thinly, put in a bowl of water, then drain and squeeze out the excess moisture well.

Cut up the salmon and tomatoes into 1cm cubes and put in a bowl. Drizzle in the olive oil and mix.

Add the sweetened vinegar to the bowl. Season with salt and pepper.

Add the dried basil and onion into the bowl and mix. Mound on top of a plate lined with lettuce leaves and it's done!
