Roll out the puff pastry and cut it into triangles. Stack the triangles on top of each other. Brush the stacked triangles with the egg yolk and milk mixture. Preheat the oven to 350°F (180°C). Bake for 20 minutes.

Let the triangles cool. To make the whipped cream, use a stand mixer with a whisk attachment to beat the heavy cream. Gradually add the powdered sugar and a splash of vanilla extract, beating until stiff peaks form. Chill the whipped cream. Once the triangles are cool, cut them open and fill with the whipped cream.

Slice the strawberries and add them on top of the whipped cream, then cover with the other half of the triangle. Dust with powdered sugar and add extra strawberries on top if desired. Refrigerate until ready to serve.
