Ingredients

20 minutes
4 servings
  1. 2 cupfresh mint leaves
  2. 2 cupcooked quinoa
  3. 2small riped yellow mango
  4. 1red bell pepper
  5. 2 tablespoonextra virgin olive oil
  6. 2 tablespoonbalsamic vinegar
  7. Salt and pepper to taste

Cooking Instructions

20 minutes
  1. 1

    Chop the mint

  2. 2

    Dice the mango and the red bell pepper

  3. 3

    Mix all the ingredients together in a bowl

  4. 4

    Refrigerate for at least 30 minutes before serving

  5. 5

    Enjoy!
