I made an all-purpose sauce or dressing using new harvest sweet onions.
No hints in particular, except to skim off the scum when it comes to a boil.

Steps

Make the onion ready.

Grate the onion. You can also use a food processor to blitz it until it's in a liquid state.

Put the grated onion and the ★ ingredients in a pan, and bring to a boil. Skim off the scum that comes to the surface carefully.

After all the scum is removed, simmer for 2 minutes. If you're using a regular onion, simmer for an additional 2 minutes.

Turn off the heat, and add the ◆ ingredients (vinegar, oil, pepper) and mix well to finish!

Transfer to a closed container. It keeps in the refrigerator for about 2 weeks!
