Steps

Wash green mung dal 2 - 3 times.Than soak in fresh water for 2 hours only.Don't soak more as the skin from the dal will come out on draining the soaked water.

Drain the water, grind the dal without using any water to a fine paste. Grind ginger- garlic -chilli paste also along with it.

Add sooji & besan & mix well. Add boiled veggies & chopped coriander. Mix well.

Add sesame seeds, sugar and salt. Mix oil. Add 1/2 t.spoon eno fruit salt. Add 1 t.spoon lemon juice over it. Wait for a second for bubbles to come & mix everything gently.

Heat a non-stick pan. Add oil,add mustard seeds & sesame seeds. When they splutter add curry leaves & asafoetida. Pour 1/2 the batter & level it.

Cover & cook till crispy & golden. Flip & cover & cook the other side till golden & crispy. Make another handvo the same way. Serve hot with tea / coffee. I have served it here with green chutney.

This handvo tastes good both hot & cold.So enjoy both ways.......
