I do not like frying shrimp as they spit oil everywhere! So here is a recipe that doesn't require deep frying. It's healthy and ecological.

Steps

Mix the panko and vegetable oil in a heatproof dish. Microwave uncovered for a minute and mix well. Repeat this process until the panko have browned.

Remove the shells from the shrimp. Make a cut down the inner side.

Sprinkle herb salt on the shrimp and let rest for 20 minutes.

Coat with flour, egg, then the crumbs from Step 1 in order. Bake in an oven or toaster oven until crispy. If you use an oven, the cooking time is 10 to 15 minutes at 410F/210C.
