2 eachpeaches (500 grams)
2 eachheirloom tomatoes (500 grams)
1/4 eachred onion thinly sliced (30 grams)
1 tbsporange juice
2 tbspextra virgin olive oil
2 tbspbasil freshly torn
2 tspmint freshly torn
1 eachsalt and pepper to taste

Combine sliced peaches, red onion and tomatoes cut in chunks.

Add freshly torn basil and mint, olive oil, orange juice, salt and pepper to taste.

Gently stir to combine. Any combination of heirlooms adds great flavor and color to this dish.

Lovely fresh lunch, I also added chopped spring onion to this, and let it come to room temperature
