For Masala Paste

Make a fine paste of all above in a mixer jar

Warm the Kadai, once it’s super hot and once smoke comes out slow the flame. Add panchphoran, dry red chillies.

Once the phorna crackles, add sliced Onions and add salt.

Add the sliced Veggies, mix well on medium flame.

Add the Turmeric & Red Chillies powder

Add the mustard jeera paste and mix well, add some water 1-2 tablespoons

After mixing well for 5 minutes on medium flame, cover and cook for another 10 minutes. Check intermittently and add water till the vegetables are all well done. Add water sprinkles if needed

Open the lid after 10 mnts and dry the moisture completely by stirring without cover.
It’s ready to serve hot with Plain Daal, Chawal, Odia Pakhala or Roti.
