For the 3rd Stage of the #DelantalDorado23, I chose ground beef as the main ingredient for this recipe, since it's the most common in our diet.
I made an enchilada with just a little bit of spice for those with sensitive stomachs, so most people can enjoy it—especially now that we have some cool, rainy days.
Here are some nutritional recommendations from Traditional Chinese Medicine:

Ingredients

Serves 4 servings
  • 1 1/3 lbsbaked potatoes, cut into wedges (about 600 grams)
    🥔Patatas Asadas al Pimentón en Olla GM y Cabezal de Horno
  • 1onion
  • 3 clovesgarlic
  • 1/2red bell pepper
  • 1-2cayenne peppers, I used just 1
  • 3/4 cuptomato purée or 2 ripe tomatoes, chopped (about 200 grams)
  • 1/2dried ñora pepper
  • 1/2 tablespoonsweet paprika
  • Handfulfresh cilantro or 1 tablespoon dried
  • 1 teaspoonground cumin
  • 14 ozground beef, I used beef (about 400 grams)
  • 3 1/2 ozshredded cheese, I used Emmental (about 100 grams)
  • 2 tablespoonssliced olives, I used green (about 2 oz / 60 grams)
  • Olive oil, sugar, and salt to taste

Steps

  1. 1

    Peel the onion and garlic, wash the red bell pepper, and slice them into thin strips. Remove the seeds from the cayenne peppers and chop them.
    Sauté the vegetables in olive oil over medium heat for 5 minutes.

    Add the tomato purée, sugar, ñora pepper, sweet paprika, cilantro, cumin, ground beef, and salt to the pan.
    Mix well and cook for 10 minutes over medium heat.

    Preheat the oven to 410°F (210°C) with top, bottom, and convection heat if available.

    In an oven-safe dish lined with parchment paper, arrange the baked potato wedges and season with salt to taste.
    Spoon the beef and vegetable mixture over the potatoes, then top with shredded cheese and sliced olives.

    Bake for 10-15 minutes, then broil until the cheese is golden brown.
