This is a famous dish from Da Lat, where the ingredients come together harmoniously to create a delicious meal. I served this to a friend who visited over the weekend. She loves banh cuon and banh uot but wanted to try a different style than the traditional version.

Thinly slice the onions and soak them in ice water to reduce their sharpness. Soak the napa cabbage and bean sprouts in lightly salted water, then rinse well.

Wash the cucumbers and cut into sticks. Chop the cilantro. Prepare the garlic chili fish sauce.

Rub the chicken with salt and rinse thoroughly, including the skin and inside. Boil the chicken with salt, chicken bouillon, and onion for fragrance.

Clean the chicken offal and boil together with the chicken. Steam the bean sprouts until just cooked.

Once the chicken is cooked, cut it into bite-sized pieces and add finely sliced kaffir lime leaves. Mix the shredded chicken with sliced onion, chicken offal, immature eggs, and cilantro. Add garlic chili fish sauce and toss well.

For serving, arrange the steamed bean sprouts and banh uot rice sheets on a plate, top with fried shallots, and add chopped napa cabbage.
