Red Amaranthus Stir -Fry

The amaranth is renowned as part of healthy diets for centuries because of its innumerable health benefits. The first records of growing it dates back nearly 8,000 years, and since then, it has become extremely popular as a superfood for being a very rich source of many essential vitamins. Both amaranth leaves and seeds are edible. I have prepared the stir fry of local red amaranth with veggies.

Both amaranth leaves and seeds are edible. I have prepared the stir fry of local red amaranth with veggies.

Arrange and assemble the ingredients first. Clean, wash and chop the amaranth leaves.

Roast urad daal bodi in vegetable oil. Heat mustard oil, add mustard seeds and dry red chilli. Allow to splutter the mustard seeds.

Add chopped onion, garlic and green chilli. Saute till aromatic and translucent onion, then mix chopped tomatoes.

Now add pumpkin and saute to be cooked. Mix chopped amaranth leaves and fry on medium flame. When the volume of amaranth gets reduced, add salt and mix well.

Then grated coconut 🥥 and crushed urad daal bodi to be added to red amaranth leaves. Cook for a minute after mixing well. Garnish with roasted bodi and red chilli before serving.
