India celebrates its 77th Independence Day on 15th August 2023 (76 Years of Freedom)

Kerala Style Red Coconut Chutney Recipe which taste best with dosa, idli, uttapam, vada, appam, plain hot steamed rice and many more. The main ingredient of this dish is freshly grated coconut. This chutney taste best when made with pearl/sambar onions. Since the shallots was unavailable in my kitchen pantry, I made it with regular onions. Still it turned out delicious. Use of dried red chillies gives the chutney a bright and vibrant look. To make it flavorful it is suggested to use coconut oil when sautéing the onion, garlic and red chillies and also for the tempering.

Ingredients

  • 1 tbspCoconut Oil
  • 2Small Onions or 1/2 cup Pearl/Sambar Onions (Chopped)
  • 5-6 ClovesGarlic
  • 5-6Dried Red Chillies
  • 225 gmsFreshly Grated Coconut (2 cups)
  • 1 1/2 InchGinger
  • Salt to Taste
  • 3/4 cupWater (or As Required for grinding the chutney)
  • For Tempering:
  • 2 tbspCoconut Oil
  • 1 tspMustard Seeds
  • 1 tbspUrad Dal
  • 1 tbspOnions (Chopped)
  • 2 SprigsCurry Leaves
  • 2-3Dried Red Chillies

Steps

    Firstly, heat coconut oil in a pan. Add the chopped onions and garlic and saute on medium flame for a minute.

    Next add the dried red chillies and saute for few seconds until well roasted. Off the flame and allow it to cool.

    In a mixer grinder, add the freshly grated coconut, ginger, salt and the sauteed onion-garlic-red chillies. Adding little water at a time, grind to a fine paste.

    Transfer the blended chutney in a serving bowl.

    For Tempering the Coconut Chutney: Heat coconut oil in a tadka pan. Add the mustard seeds and allow it to crackle. Add the urad dal and fry until light golden. Next add the chopped onions and fry until golden in color.

    Add the curry leaves and the broken dried red chillies. Fry only for few seconds and off the flame.

    The flavorful tadka for the red coconut chutney is ready.

    Pour the tempering over the prepared chutney and mix it well.
