  • 1 1/4 tspground cumin
  • 1/2 tspground ginger
  • 1/2 tspground cardamom
  • 1/4 tspground cloves
  • 1/4 tspground coriander
  • 1/4 tspmixed spice
  • 1/8 tspground cayenne pepper
  • 1red onion, sliced
  • 1bell pepper, sliced
  • 2courgettes, sliced into 1” pieces
  • 100 g (1/2 cup)raisins
  • 1 tspsalt
  • Zest of 1 orange
  • 1 can(400 g/14 oz) chickpeas, drained
  • 350 ml (1 1/2 cup)vegetable stock
  • Juice of 2 oranges
  • 270 g (1 1/2 cup)couscous
  • 3 tbspfresh mint

Steps

  1. 1

    Add the cumin, ginger, cardamom, cloves, coriander, mixed spice and cayenne to a large saucepan. Toast for 2 minutes over medium high heat, until fragrant.

    Add the onion and cook for 5 minutes, until softened.

  3. 3

    Add the bell pepper and courgette and cook for another 5 minutes.

  4. 4

    Stir in the raisins, salt, orange zest and chickpeas.

  5. 5

    Add the vegetable stocks and fresh orange juice. Bring to a boil and then cover and take off the heat. Leave for 5 minutes.

  6. 6

    Fluff the couscous with a fork and stir in the fresh mint. Serve.
