Ingredients

45 minutes
Serves 3 servings
  1. 1.1 lbsvery thinly sliced beef for carne en su jugo (some butcher shops use a ham slicer for this)
  2. 3.5 ozraw bacon, cut into small cubes
  3. 9 oztomatillos (green tomatoes)
  4. 1/4onion
  5. Pickled jalapeño peppers to taste (just for flavor, not to make it spicy)
  6. Cilantro
  7. Chicken bouillon powder
  8. To taste, per serving
  9. Cooked pinto beans (frijoles de la olla)
  10. Crispy bacon
  11. Sautéed or fried onion
  12. Avocado
  13. Cilantro
  14. Onion
  15. Lime

Steps

45 minutes
  1. 1

    In a pot, sauté the bacon without adding any extra fat.

    When the bacon is cooked but not yet crispy, add the beef and season with pepper and garlic salt.

    Blend the tomatillos with the pickled jalapeños (without the brine), onion, cilantro, and chicken bouillon, adding enough water to blend smoothly.

    When the beef is halfway cooked (don't cook it all the way, as you want it to release its juices), add the blended sauce, straining it as you pour it in.

    Cover the pot and simmer over medium heat for about 15 minutes, or until the beef is fully cooked and the flavors are well combined.

    When serving, each person can add avocado, crispy bacon, sautéed onion, cooked pinto beans, cilantro, onion, serrano pepper, and/or lime to taste.
