A very easy recipe for carne en su jugo, from my mother-in-law's family. It's delicious and quick to make.

In a pot, sauté the bacon without adding any extra fat.

When the bacon is cooked but not yet crispy, add the beef and season with pepper and garlic salt.

Blend the tomatillos with the pickled jalapeños (without the brine), onion, cilantro, and chicken bouillon, adding enough water to blend smoothly.

When the beef is halfway cooked (don't cook it all the way, as you want it to release its juices), add the blended sauce, straining it as you pour it in.

Cover the pot and simmer over medium heat for about 15 minutes, or until the beef is fully cooked and the flavors are well combined.

When serving, each person can add avocado, crispy bacon, sautéed onion, cooked pinto beans, cilantro, onion, serrano pepper, and/or lime to taste.
