Ingredients

  1. 5 poundspotatoes
  2. Potatoes and Toppings
  3. To taste sour cream
  4. 1 cupshredded Swiss cheese
  5. 1/2 poundsbacon
  6. To taste salt
  7. 1 stickbutter divided
  8. 1/2 cupgood extra virgin olive oil
  9. Boiling
  10. 4 quartswater
  11. 2 tablespoonssalt

Cooking Instructions

    Add the potatoes to the pot and cover with the water. Add salt to the potatoes and water. Boil the potatoes till fork tender. Keep an eye on the water level because it will evaporate quick because of the salt. Preheat oven to 400° Fahrenheit.

    Put the potatoes on a baking sheet. Smash them. Drizzle with olive oil and add a pat of butter on top of the smashed potatoes.

    Roast in the oven for 35-40 minutes. My potatoes were whole potatoes full sized. Usually I do these with new potatoes. Chop and add the bacon to the tops, put into the oven 15 minutes, then take out add the cheese, and put into the oven till cheese is melted. Top with sour cream and serve. I hope you enjoy!!!
