This is the way my husband, who loves rich flavors, likes it.

By coating the pork with flour, the flavors cling better. The sinews are cut around the edges of the pork slices to prevent the meat from shrinking when cooked. The meat will become tough if you overcook it, so if you can't fit all of them in the frying pan, cook them in batches. Recipe by Chibibou mama

Ingredients

  • 300 gramsThinly sliced pork loin
  • 1 dashSalt and pepper
  • 1Cake flour
  • Seasonings:
  • 1piece/clove each ★Garlic, ginger (grated) Tubed is OK
  • 1 tsp★Sugar
  • 1 tsp★Coarse white sugar
  • 1 tbsp★Sake
  • 2 tbspeach ★Mirin, soy sauce
  • 1 tbspVegetable oil
  • 1Cabbage, tomatoes, mizuna greens, or some other vegetables of your choice

Steps

  1. 1

    Combine all the ★ seasonings.

  2. 2

    Cut the sinews all around the pork slices and season lightly with salt and pepper. Dust with flour.

    Heat oil in a pan. Pan fry the pork, in batches if needed, browning the pieces on both sides.

    When all the pieces are browned, return to the pan, add the combined seasonings, coat the pieces, and it's done.

    The sauce is very well flavored, so pour it over the cabbage too - delicious!!
