Ingredients

4 servings
  • 800 gramsChicken meat
  • For marinating:
  • 2 tbsp◯ Cooking sake
  • 2 tbsp◯ Soy sauce
  • 3 tsp◯ Grated ginger
  • 1Katakuriko
  • 1for frying Vegetable oil
  • For the sauce:
  • 300 ml・ Water
  • 150 ml・ Mentsuyu (3x concentrate)
  • 1 tbsp・ Mirin
  • 150 ml・ Grated daikon radish
  • 100 ml・ Grated nagaimo yam

Steps

  1. 1

    Marinade the chicken for at least 1 hour.

    Put the water, mentsuyu and mirin in a pan and bring to a boil. Switch off the heat and add the grated daikon radish and nagaimo yam, and mix well.

    Put the marinated chicken and katakuriko in a plastic bag and shake to coat the chicken evenly.

    Deep fry at 180°C until crispy.

    Put the fried chicken on a serving dish and pour the sauce over it. Delicious with some yuzu pepper or grated ginger too!
